Korean Barbecue, Toasted Subs, and Classic American Fare Arrive in the Magic City |
Billings' West End is experiencing a culinary expansion with the arrival of three new chain restaurants, offering residents a variety of dining options.
Cupbop, a Korean barbecue concept, has commenced a soft opening at 2564 King Ave W, Suite A, with a grand opening scheduled for January 29. Known for its build-your-own bowls and bold sauces, Cupbop aims to introduce a unique flavor profile to the area.
Owner Bryan Layton, who previously operated multiple Great Harvest Bread locations, expressed enthusiasm about the venture. "This is Korean barbecue in a cup. It's delicious," Layton stated. "The sauces, I think, are really what make the dish, so it makes us unique, for sure."
Layton, along with General Manager Trevor Fuller, who formerly ran the Pit House Barbecue food truck, believes Cupbop fills a gap in the local dining scene. "Billings has a very dynamic market—when something new comes to town, everyone wants to try it," Fuller noted. "It's a great bridge between authentic Korean and American Korean barbecue."
Regular hours for Cupbop will be 10:30 a.m. to 9 p.m., Monday through Saturday, with closures on Sundays.
Just down the road, Cheba Hut, a toasted sub shop with a cannabis-themed brand, is set to open by the end of next month at 824 Shiloh Crossing Blvd., off King Avenue West. The restaurant offers over 20 toasted sub sandwiches, all named after marijuana strains, though none contain THC.
"Come for the food, stay for the vibe. We're very chill, very relaxed, very friendly. We welcome everybody," said Assistant General Manager Sagen Feuer.
Director of Operations Rigo Perez emphasized the theme's role in branding. "There's a branding there, but that is just the branding. Although we also literally toast every sub," Perez explained.
Cheba Hut plans to operate from 10 a.m. to 11 p.m. Sunday through Thursday, and until midnight on Fridays and Saturdays.
For those seeking traditional American fare, Doc Holiday’s Roadhouse is preparing to open at 760 S. 20th St. West, the former location of Gusick’s Restaurant. Originating in Williston, North Dakota, the restaurant features pizzas, steaks, and other American favorites, complemented by large cowboy-themed décor, including oversized buffalo sculptures.
With these additions, Billings' West End continues to diversify its dining landscape, offering residents and visitors an array of new flavors and experiences. |
