Hey there, neighbor! Fall is sneaking in—crisper mornings, golden leaves, and that cozy feeling that makes us want to pull up a blanket on the porch with a hot drink.  🎃 Pumpkin Cream Cheese Swirl Muffins

Because you deserve something sweet :)

 

Ingredients (makes about 12 muffins):

For the pumpkin batter:

  • 1 3/4 cups all-purpose flour

  • 1 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 tsp pumpkin pie spice

  • 1 cup canned pumpkin puree

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

For the cream cheese swirl:

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 egg yolk

  • 1/2 tsp vanilla extract


Instructions:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

  2. In a large bowl, mix together the flour, sugars, baking soda, salt, and pumpkin pie spice.

  3. In another bowl, whisk together pumpkin puree, oil, eggs, and vanilla. Pour wet mixture into dry ingredients and stir until just combined.

  4. In a small bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.

  5. Spoon pumpkin batter into muffin cups, filling about 3/4 full. Add a spoonful of cream cheese mixture on top of each and swirl with a toothpick.

  6. Bake for 18–22 minutes or until a toothpick inserted into the muffin (not the cream cheese center) comes out clean.

  7. Let cool for a few minutes and enjoy warm or room temp.
